Sonia, 36, started to work on in coffee at 14 when she would pick cherries after school. She manages her family farm with her husband. With the guidance of Monkaaba, they were able to improve quality and connect with International buyers like ourselves.
Cherries are collected every two weeks, and are left to ferment for 12 hours in bags. The cherries are then depulped and left to dry ferment for another 36 hours. The coffee is washed four times, and then left to drain for 24 hours before being moved into a solar dryer for 15 days.
A very beautiful coffee that is sweet, mildly fruity and floral. The aroma was full of stone fruits, and we tasted fresh peach, giving the coffee a silky and smooth mouthfeel.
The coffee's sweetness reminded us of vanilla, and the overall sensory experience was flowery, delicate but bold at the same time.
We prefer this coffee as a filter coffee or espresso based drink with a little milk. It also make delicious cold coffee for the warm summer days.
