(via Monkaaba, a collective of farmers whose goal is to assist other growers in the area to not only find a better market for their coffee, one that pays a solid price, but also to invest in the knowledge and skill of producers in a way that ensures their future success.)

Damian is a new addition to the Monkaaba roster. After working for a fertilizer company that made him visit many coffee farms, he was inspired to go back to his family's farm and start applying the knowledge he gained.

This washed caturra was picked from the trees every two weeks, a time consuming effort that yields a clean and beautiful cup.
Cherries are floated to sort unripe and defective fruit, before being left to ferment for 15 - 18 hours. They are then depulped and left to dry ferment for another 36 - 38 hours. The seeds are then washed of mucilage and left to drain for 6 hours in the tanks before being moved to the solar dryer where it’s dried for 18 - 20
days.

In addition to doing sample roasting work for Monkaaba and doing field work to help farmers, he is constantly working to improve his own coffee.

A versatile coffee from Colombia that we love to enjoy in the morning. It makes a delicious filter coffee and is an easy coffee to brew as an espresso as well, with or without milk.

It's round and sweet, with heavy milk chocolate notes.
The acidity is citrussy. Orange is what we mostly tasted.
The aftertaste is a very interesting baking spices mix.
