This coffee comes from the remote and stunningly beautiful terrain that generations of the Hameed family have called home. Seasoned coffee growers with a profound connection to their land, the Hameed family sees their coffee trees and terraces as more than just a source of income: they are a legacy and a point of pride.

Despite scarce resources and the isolation of their hamlet, the Hameed family remains dedicated to perfecting their craft, producing exceptional coffee that embodies their heritage and unwavering commitment to quality.

Bait Alal is located in the region of Hayma Kharijiya in Sana’a (one of the country’s most renowned coffee-growing regions) and is perched on a mountain top at an altitude of 2,300 metres above sea level. It is home to 300 farming families.

Natural process is a time-honored coffee processing method that results in extraordinary depth and complexity of flavour. The process requires meticulous management throughout to result in flavour clarity. 

After selective hand-harvesting of only the ripest cherries, dense and at the peak of their flavours, Qima's on- ground team promptly collects the cherries at the farm gate and transports them to our in-house drying facilities. The cherries are then placed on raised parabolic drying beds, where they are left to dry until the insides have reached the optimal moisture level. This can take between 15 to 25 days. The cherries are turned periodically during drying to avoid over fermentation. Moisture, density and BRIX levels are closely monitored to ensure uniformity and quality.

This type of coffee might be as close as one can get to the holy grail of coffee: a perfect balance of flavours that will make you want to drink cup after cup.

This coffee is harmonious on every level: complex enough to be interesting, but smooth enough to also simply enjoy it during a quiet moment.
The combination of peach, brown sugar (specifically cassonade in French) makes those brew feel like a liquid cobbler. Maybe that's why some brews felt like sweet bread as well.
Dried fruits (prunes) and spices (all spice) are present in the finish.
